On 5 August 1887 the company Castlemaine Brewery and Quinlan Gray Co. Brisbane, Limited was incorporated. On incorporation the company purchased the assets of two firms, Fitzgerald Quinlan and Company and Quinlan Gray and Co. The firm of Fitzgerald Quinlan and Co. owned and conducted the Quinlan Brewery at Milton (Qld). In 1918 the Company discontinued its business of general merchandising and expanded the Brewery and Wines and Spirits operation. Following the purchase in 1928 of some of the assets of Perkins and Co. Ltd, the brewer and maltster, the name was changed to Castlemaine Perkins Ltd. From 1929 onwards the Company expanded its Brewery operations and purchased a number of hotel freeholds in both the city and country. It operated in Bundaberg, Queensland a Wines and Spirits Merchant's Business as a subsidiary company, Fred Baker Pty. Ltd.
In November 1979 Castlemaine Perkins of Brisbane merged with Toohey's of Sydney; it was a $215 million union. Castlemaine claims 75% of the Queensland market and Toohey's claimed 43% of the NSW market. Because of the sensitivities of the Queensland Government to the takeovers of Queensland companies by companies from other states, the new company had five representatives from each of the former companies on the new company's board, although it was reported that former Toohey's shareholders owned 54.5% of the shares in the new company.
On May 15, 1980 a resolution was passed to change the company's name to Castlemaine Tooheys Limited.
